Strawberry Ice-Box Cake, Make-It Monday

The weather is getting warm, the sun is staying up late, and it’s the time that you have friends over and you head out. So, that means more potlucks and barbecues- easy and light recipes that don’t keep you in the kitchen and feeling heavy afterwards. This couldn’t be an easier recipe and it can be thrown together in less than 5 minutes- this ice box cake is the perfect summer recipe!

Strawberry Ice Box Cake
-2 sleeves of graham crackers
-2 cans of whipped cream
-2 cups of cut strawberries
1. Layer graham crackers, whipped cream, and strawberries 2-3 times.
2. Leave out for 5 minutes to allow slight melting.
3. Place in fridge for at least half an hour; place in freezer for a harder cake.

That’s literally all there is to it! I loved this cake, it was absolutely delicious. I made a single sized serving on a plate for myself- being able to break the crackers on perforated lines allows you to fit the cake to any container possible. If you wanted, you could certainly use blueberries or raspberries (or any other kind of berry that strikes your fancy). I also swap in heavy cream that I’ve whipped myself- however, cans allow for a much faster process. You could also try this with some chocolate graham crackers and chocolate whipped cream.
