Popcorn Marshmallow Bars- After sharing my S’Mores Bar recipe last week, quite a few people commented/ emailed/ messaged to ask where they could find graham crackers, which are more of a North American thing. (Update: I believe Tesco stocks them in the world food aisle, many Amazon country shops seem to have them, and in a pinch, digestives would work 🙂 ) So I decided to come up with a similar recipe that might be more international friendly to source and make, as I know how frustrating it can be to find a recipe only to realise you can’t source the ingredient. (Castor sugar, I’m looking at you…) This is a popcorn based marshmallow mix that I would say is somehow even easier than the S’More mix!
This is another good reicpe for hot weather, as there is no baking involved. I prefer to make all popcorn myself and season it to my liking, but microwave popcorn would work for this recipe, too! (You might need to make quite a few bags, though…) This would be a good recipe to involve older kids with, as they can help with the stirring and the mixing. It’s also just easy to throw together last minute if you forget you needed something!
Easy Popcorn Marshmallow Mix
-10 cups popped, salted popcorn
-12 oz bag of marshmallows
-2 tbsp salted butter
– 1/2 cup of mini Reese Pieces/ mini M&Ms/ mini chocolate chips
1. Have popcorn in large bowl (that allows for room to mix it).
2. Melt butter in saucepan on medium heat. Slowly add marshmallows, continually stirring (the mixture can burn very easily).
3. Pour marshmallow mixture onto popcorn, and mix with silicone spatula (or greased spoon).
4. Sprinkle Reese’s/ M&Ms/ chocolate chips/ whatever you choose into mixture.
5. Allow to cool, and enjoy!
-You need to salt the popcorn to balance out the sweetness of the marshmallow and the candy, and salt it pretty liberally. Otherwise, it will taste “off”, and you won’t enjoy it quite as much. (I know that a lot of people will try to cut salt in order to be healthier, but in baking/dessert recipes, it plays a pretty important role in balancing the recipe. Don’t cut the salt, folks!)
