As per my summer of recipes, I have been tackling one new recipe every week. While sometimes I am not 100% in the mood to bake/cook, I always end happy that I tried it out. Some recipes are more of a leap, but for this week, I tried Brownie Cookies! I love brownies- if I could only ever have one dessert for the rest of my life, it would be a brownie. And cookies make everything easy to transport and in a bite-sized portion (so that I don’t eat everything). I looked through probably ten different recipes before settling on this one; it had several positive reviews that swung me.
Ingredients
– 2/3 cup vegetable shortening
– 1 1/2 cups packed light brown sugar
-2 eggs
– 1 teaspoon vanilla extract
– 1 tablespoon water
– 1 1/2 cups all-purpose flour
– 1/3 cup unsweetened cocoa powder
– 1/4 teaspoon baking soda
– 1/2 teaspoon salt
– 2 cups semisweet chocolate chips
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- Beat vegetable shortening and sugar with an electric mixer in a large bowl until smooth. Beat in one egg until completely incorporated. Beat in last egg along with vanilla extract and water. Combine flour, cocoa powder, baking soda, and salt in a small bowl. Stir flour mixture into creamed mixture at low speed until just blended; fold in chocolate chips. Drop spoonfuls of dough 2 inches apart onto ungreased baking sheets.
- Bake in preheated oven until cookies are set, 7 to 9 minutes. Cool 2 minutes on baking sheet; transfer cookies to wire racks to cool completely.
What I Would Change
– I wouldn’t make these. Sure, if you want double chocolate cookies, they are more than alright. BUT, if you are like me, and want brownie cookies, you will not get them. To all of the reviewers on All Recipes who said that they make crinkly top, brownie cookies, you are full of lies. (I followed this recipe to a tee, by the way.)
