I think that by this point, anyone who has facebook has seen those Tasty videos- 2 minutes or less with they speed through the ingredients and steps to make a recipe. I enjoyed them at first; they were easy, basic recipes that didn’t look too difficult. And then they started to get more complicated- 12+ ingredients, numerous steps, hours to prepare. Just too much for me to glean from a two minute video! And then I saw Ice Cream Bread– two ingredients, two steps. That’s what I like to see!!
I decided to use classic vanilla ice cream and flour, no sprinkles or chocolate chips for a first try! So, what is the recipe?
Ice Cream Bread
-2 cups of regular ice cream (not low- or non-fat)
-1 1/2 cups self-rising flour

1.Mix ice cream and flour together. Put in greased and floured pan.
2. Bake at 350°F for 40-45 minutes.

What did I change?
-*** Here comes the bonus! I didn’t have self-rising flour, so I made my own. I mixed 1 cup flour with 1 1/2 tsp baking powder and 1 tsp salt. (Repeated again in half to make the extra 1/2 cup!) This makes far more sense to me than keeping flour around that I won’t use fast enough anyways 🙂 ***
-I am hesitant with my oven, it is a bit hotter than most. I let it bake for 32 minutes, checked it, and put it back in for an additional 8. So 40 minutes total, and I wouldn’t bake it for much longer.
The verdict?

This is definitely a bread and not a cake, even though it looks like a cake. It actually tastes more like a scone to me than bread or cake! It is a little bland on its own, but I would not be against it with some clotted cream or jam. It is incredibly easy, and I’m impressed with how it turned out! This is a firm recommendation 🙂 I will try with another flavour of ice cream soon and report back!
