As most of my readers know, my brother has a certain little husky, Loki, and this past week just happened to be his second birthday! Of course we couldn’t let it pass without having his 2nd Birthday Pawty! I decided to make the little guy pupcakes as a treat.

Here is the recipe I used:
Pumpkin & Peanut Butter Pupcakes
(Makes 9-10 regular sized cupcakes)
1/4 cup brown rice flour*
1/4 cup oat flour*
1/4 cup quinoa flour*
1 tsp. baking powder
1/2 tsp. baking soda
1 cup unsweetened pumpkin puree (or sweet potato puree)
1/4 cup natural creamy peanut butter, with no added sugar
2 large eggs
1 TBSP ground flax seeds
1/4 cup unflavored coconut oil, melted
For the frosting:
3 oz. cream cheese, softened
3 TBSP natural creamy peanut butter

Changes I made:
-I used all regular flour- it seems to go well for Loki, and I didn’t have time to buy numerous flours I wouldn’t use in other recipes.
-I shredded carrots to use instead of Chia seeds- most pupcake recipes use one or the other, so I went with shredded carrots because I know Loki likes them!
-We just iced them with peanut butter, I wasn’t sure how cream cheese would go over.
They were fairly easy to make, I just dumped everything in the Kitchenaid and then baked them. Loki’s best friend Thorn came over for the pawty- both pups LOVED the cakes! Thorn even ate two! SUCCESS!!
