Welcome to the first Blogmas recipe of 2021! Baking is a big part of my holiday celebrations, as I know it is for a lot of people, and I love sharing recipes. I tend to make quite big batches, so I gravitate towards simpler recipes that are faster to make and don’t require speciality equipment. (And I hope that makes it easier for you, as well.) These are known by several names, but are delicious no matter what. Let’s jump into our Recipe of the Day: Chocolate Crinkle Cookies!

Chocolate Crinkle Cookies Recipe
This recipe is an amalgamation of several different crinkle cookie recipes. Some people call them crinkle cookies, others call them snowballs (not to be confused with coconut snowballs), but they are always loved. They are soft and chewy, and icing sugar provides just the right amount of sweetness!
These cookies are also fairly easy to make, and keep for up to a week if keep in an airtight container.

Chocolate Crinkle Cookies Ingredients
-1 cup + 1 tablespoon all purpose flour
-1 teaspoon baking powder
-1/4 teaspoon salt
-1 cup white granulated sugar
-1/2 cup canola/vegetable oil
-2 large eggs
-1 teaspoon vanilla extract
-1/2 cup cocoa powder
-1/2 cup icing sugar
Chocolate Crinkle Cookies Directions
1. Preheat oven to 350F.
2. In large bowl, combine cocoa powder, white sugar, oil, vanilla, and eggs- mix until smooth.
3. In medium bowl, mix flour, baking powder, and salt.
4. Slowly add flour mixture to wet mixture until fully combined.
5. Roll cookies into even sized balls (this recipe made 24 cookies for me), place in a closed container, and place in fridge for 3-5 hours.
6. Roll cookies in icing sugar and coat generously, and evenly space cookies on baking sheet.
7. Bake for 10-12 minutes; watch for powdered sugar to melt/caramelise.
8. Allow cookies to cool before moving to a wire rack.
