S’Mores Bar- Make It Monday

In the spring and summer, I tend to gravitate towards more no bake recipes, as you don’t need your house to be warmer than it is already is and I usually find that they are faster to make! (When spring and summer combined are 5 months total, you have to maximise time outside. I think that s’mores are a favourite among most North Americans but if you don’t want to actually have a fire, you can get the delicious taste of a s’more without the work of a fire with this recipe!

I’ve been looking for s’more bar recipes for quite a while now but they all either seem to use graham crumbs and cereals or marshmallow fluff. I wanted to avoid both of these as they won’t really get used afterwards if any are left over (as opposed to graham crackers and regular marshmallows that will)!

Classic S’More Bars

-250g regular marshmallows (handful of mini marshmallows)
-75g of salted butter
-150g of semi-sweet chocolate chips
-265g of graham crackers (2/3 sleeves in a regular box)


1. Crush graham crackers into smaller pieces (1-2cm size). Empty broken graham crackers and 125g of chocolate chips into greased 33x23cm pan.
2. Over medium heat, melt butter and and regular marshmallows together until melted. DO NOT let this sit as it can caramelise quickly (continuous stirring needed)!
3. Pour melted marshmallow and butter mixture over graham crumbs and pack down. Top with remaining mini marshmallows and chocolate chips.

Overall, this is really easy, really quick (less than 10 minutes, start to finish) and is perfect for when you really want s’mores but you don’t have 2 hours to wait for a fire to die down! You can also usually find marshmallows, chocolate, and graham crackers on sale routinely throughout the summer in the grocery store, so it’s not too expensive either.

    Okay I want these right this minute!
    My go-to summer dessert had to be watermelon salad with a simple sugar and mint sauce. Light, just sweet enough and easy peasy.

    So I am definitely going to make these for the bday party next week for my daughter- any recommendations on what is a good European alternative for Graham crackers? Are they salty?
