My dad seems to obsessed with oatmeal raisin cookies, and every time I make cookies, he tells me to make oatmeal raisin cookies instead. Buuuut, I don’t particularly like raisins, especially not cooked. No one wants a super hard, tiny rock raisin. So, when I was looking for a recipe to make, I thought of oatmeal cookies. Oatmeal CHOCOLATE CHIP cookies 😀 It also has the added benefit of providing me with fibre. Muahahaha, beating the system with cookies! How did it go?
This is the recipe I used:
- 2/3 cup (150 mL) butter, softened
- 1 cup (250 mL) packed brown sugar
- 1 egg
- 2 tsp (10 mL) vanilla
- 1-1/2 cups (375 mL) large-flake rolled oats
- 1 cup (250 mL) all-purpose flour
- 1/2 tsp (2 mL) baking powder
- 1/2 tsp (2 mL) baking soda
- 1/4 tsp (1 mL) salt
- 1-1/2 cups (375 mL) chocolate chips
Preparation:
Line rimless baking sheets with parchment paper; set aside.
In large bowl, beat butter with sugar until fluffy; beat in egg and vanilla. In separate bowl, whisk together rolled oats, flour, baking powder, baking soda and salt – stir into butter mixture until combined. Stir in chocolate chips.
Drop by heaping 1 tbsp (15 mL), about 2 inches (5 cm) apart, onto prepared pans. Bake in top and bottom thirds of 375°F (190°C) oven, rotating and switching pans halfway through, until golden, about 12 minutes. Transfer to rack; let cool.
What did I do differently from the recipe?
-The cookies were pretty small, but I only got 30 cookies instead of 36. I like my cookies to be decently sized, so next time I will make a double batch and make 40 larger cookies.
– I added a little bit of cinnamon, it worked well!
– I baked it for 10 minutes, instead of 12.
-**I did do the putting the sheets on two different racks and switching half way through, I would recommend doing this!**
All in all, this was an easy recipe- no stand mixer necessary, no complicated steps, nothing to do wrong, so-to-speak. If you are looking to get into cookies, I would certainly recommend starting with this recipe!
