Last weekend I was in Chapters and quickly checked out the sale racks. They had a few different mixes, and the peppermint cupcakes were $6. I usually prefer to make everything from scratch, but they were a good price and I like trying new things.
They mixed up fairly easy, just egg + egg yolk + oil + cupcake mix. I used a fork, it took less than a minute, not much effort needed. Maybe I filled the cupcakes too full, but I only had enough for 11, not 12, cupcakes. Suggested baking time was 19-22 minutes, I would put it at 24-25 minutes.
The frosting was butter + millk + frosting mix. The electric mixer had the job done in under two minutes. The frosting is certainly primarily made of icing sugar. This isn’t my one hundred percent favourite type of icing (I’m more of a buttercream fan, myself.), but I’m hoping everyone enjoys them!
The consensus? Pretty good for a mix. I don’t know if I would buy this again, as the doubling up on peppermint was a little much (and I LOVE peppermint), but not bad for a mix bought from a bookstore.

Mine obviously don’t look as nice as the ones on the box. This is for two reasons: 1) I can’t ice things for aesthetics, I am just terrible at it. I don’t care much, though, because it it is still delicious. 2) They do not give you near enough frosting powder to frost them in the same manner as the box.
