Me being an ice cream addict and someone who spends far too much time in the kitchen finally gave into the ice cream recipe that is sweeping across Facebook, Pinterest, and every other form of social media out there. I’m always hesitant about miracle recipes that promise the world (and the food) in the easiest of ways but I figured that at the very most, I’m out $8 and a few hours. So, with the allure of ice cream I set off…
The 3 ingredient ice cream bread was supposed to be earth-shattering baking that changed the world. And it was okay. Not a dessert at all and just okay as bread. I was pretty sceptical going into this whole thing. However, I pulled out the KitchenAid mixer and started on my task!
2 Ingredient Ice Cream
-2 cups of heavy cream
-1 can of sweetened condensed milk
-1 tbsp of vanilla (Yes, I cheated. This is a third ingredient- what can I say, I’m a rebel)
1. Beat heavy cream into stiff whipped peaks.
2. Fold in condensed milk.
3. Beat again into stiff peaks.
4. Pour into loaf pan.
5. Freeze for 4-6 hours before eating!
All in all, this worked! I can’t say that I would replace all of my ice cream with this homemade recipe- it’s more expensive than just buying the ice cream and it does taste slightly different from a regular ice cream. I would use it as a garnish or a side to a crumble or pie, the intense creaminess would suit it well! The next time I do make this, I think I’m going to try mixing in a strawberry or a raspberry purée to make a fruit ice cream and see how that turns out. I think that this is a good alternative to standard ice cream if you have anyone with allergies or is concerned with limiting processed foods! While condensed milk is a processed food, I would argue there’s less processing in it than your normal ice cream.
